Chicken Breast with Orange and Chorizo

Description

One pot orange chicken and chorizo dinner. Use a large, heavy skillet with deep sides. Sear the chicken breasts until there is a dark char on all sides, then set aside. Sautee the vegetables and chorizo together, blending together the savory and salty flavors, as well as soften the texture. Mix together in the skillet, adding orange juice, and place it in the oven. The vegetables and chorizo will steam into the chicken breast while the orange juice prevents drying out.

Ingredients

  • 4 chicken breasts (or other white meat with skin on)
  • 3 carrots
  • 2 parsnips
  • 2 sweet potatoes
  • 2 tablespoons olive oil
  • 1 onions
  • 1 sprig fresh thyme
  • 70 grams chorizo (mild, cut into small pieces)
  • 1 onions
  • 1 orange
  • 2/5 liter chicken broth

Directions

  1. 1Preheat oven to 180°C.
  2. 2Peel the vegetables, wash and cut them into medium sized pieces.
  3. 3Heat the olive oil in a pan and fry the chicken pieces on all sides until they become golden brown. Set aside in a plate.
  4. 4Add the onion to the frying pan and cook for 3 to 4 minutes.
  5. 5Add the vegetables, the fresh thyme, and the chorizo. Cook for 4 to 5 minutes, stirring regularly.
  6. 6Add the orange juice.
  7. 7Remove from heat.
  8. 8Place the pieces of chicken in a cooking dish and pour the broth and vegetables over it.
  9. 9Add salt and pepper to taste and cook in the oven for 35 minutes.
  10. 10Regularly baste the dish with the broth on the bottom of the dish.
  11. 11Remove the dish from the oven. Remove the chicken pieces and cover them in aluminium foil.
  12. 12If desired, heat a frying pan and reduce the broth.
  13. 13To serve, pour broth over chicken.
