Description

Stuffed chicken breasts seems like a difficult dish to tackle, but this recipe features only 9 ingredients and easily comes together in less than an hour. The lean chicken breasts are stuffed with mozzarella cheese, garlic, and basil for a dinner that is busting with flavor. Cherry tomatoes are added to the pan for the last 5 minutes of baking, where they become tender and slightly caramelized, perfectly accenting the stuffed chicken.

Ingredients

  • 3 chicken breasts
  • 3 garlic cloves (diced)
  • salt (to taste)
  • pepper (to taste)
  • olive oil
  • 100 grams mozzarella cheese
  • 2 tablespoons basil (chopped)
  • 2 cups cherry tomatoes
  • dried oregano

Directions

  1. 1Season the breasts with 2 garlic cloves, salt, and ground pepper.
  2. 2Preheat oven to 200 degrees Celsius.
  3. 3Add a little olive oil to a baking tray.
  4. 4In a bowl mix cheese, garlic, and basil.
  5. 5Cut each breast open to form a pocket, and fill it with the above mixture.
  6. 6Close the pockets with two toothpicks.
  7. 7Bake for about 20 minutes.
  8. 8Cut the cherry tomatoes in half, and season with oregano and a pinch of salt.
  9. 9Remove the baking pan from the oven, and add the tomato.
  10. 10Bake for another 5 minutes so that the chicken is browned, and the tomatoes are soft.
