Stuffed chicken breasts seems like a difficult dish to tackle, but this recipe features only 9 ingredients and easily comes together in less than an hour. The lean chicken breasts are stuffed with mozzarella cheese, garlic, and basil for a dinner that is busting with flavor. Cherry tomatoes are added to the pan for the last 5 minutes of baking, where they become tender and slightly caramelized, perfectly accenting the stuffed chicken.

Ingredients

  • 3 chicken breasts
  • 3 garlic cloves (diced)
  • salt (to taste)
  • pepper (to taste)
  • olive oil
  • 100 grams mozzarella
  • 2 tablespoons basil (chopped)
  • 2 cups cherry tomatoes
  • dried oregano

Directions

  1. Season the breasts with 2 garlic cloves, salt, and ground pepper.
  2. Preheat oven to 200 degrees Celsius.
  3. Add a little olive oil to a baking tray.
  4. In a bowl mix cheese, garlic, and basil.
  5. Cut each breast open to form a pocket, and fill it with the above mixture.
  6. Close the pockets with two toothpicks.
  7. Bake for about 20 minutes.
  8. Cut the cherry tomatoes in half, and season with oregano and a pinch of salt.
  9. Remove the baking pan from the oven, and add the tomato.
  10. Bake for another 5 minutes so that the chicken is browned, and the tomatoes are soft.

A cinnamon flavored whiskey works well in a recipe like this, and will clear your nasal cavities if you have a cold. Different whiskeys have different flavor profiles so I have tested a few different kinds until I found a whiskey that I liked best. The tea and honey work to cut the sharpness of the alcohol. Nutmeg works as a substitute for star anise.
