  • 5 slices bacon (cooked and chopped)
  • 1 pound boneless, skinless chicken breasts (diced & shredded)
  • 1 tablespoon olive oil
  • 1 packet ranch dressing mix (dry , I use Hidden Valley)
  • 8 ounces rotini (/Penne pasta, can substitute with any other pasta you desire)
  • 1 cup mozzarella cheese (shredded)
  • 1/2 cup cheddar cheese (shredded)
  • salt (/Pepper to taste)
  • 1 can cream of chicken soup
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth (I use Swanson’s)
  • 6 ounces shredded Parmesan cheese
  • fresh parsley (for garnish if you like!)

    It turned out amazing. I used skinless/boneless chicken thighs instead of breast. Super flavorful! Topped it with paprika, grated parm, and Cayenne.

    Really Good I added more bacon and doubled the recipe for make one/freeze one. I split the recipe two 9x9 pans.

    Yummy! I had two leftover grilled chicken breast which worked great. I substituted skim milk and FF greek yogurt instead of heavy cream. I only had sharp cheddar and it worked just fine. I used 1 lb of penne too which made a lot. I used 1/2 ranch packet as I was concerned about salt. I would use the entire packet to achieve a deeper ranch taste next time. My husband loved this!

    it was a hit! I modified the way I cooked my chicken. I boiled it with herbs, spices, and chicken bouillon so that id have chicken broth. I am definitely making again.
