  • 1 cup long grain rice
  • 1 tablespoon olive oil
  • 1 pound chicken breast fillets (cut into bite-size pieces)
  • 2 garlic cloves (finely chopped)
  • 2/3 cup green onions (trimmed and sliced)
  • 14 1/2 ounces sweet corn (drained)
  • 1 2/3 cups vegetable stock
  • 4 medium tomatoes (deseeded and chopped)

    Directions

    1. Cook the rice according to the package instructions.
    2. Meanwhile, heat the oil in a large frying pan, add the chicken and stir-fry for 5 mins, until the chicken is cooked through. Add the garlic and green onions to the pan and saute briefly.
    3. Place the sweet corn in a saucepan and pour over the the broth. Bring to a boil, then reduce the heat and simmer for 3 mins. Remove from heat and add to the chicken mixture with the tomatoes. Serve with the rice.
