  • 1 1/2 lb. chicken breast (or tenderloins, chopped into small pieces)
  • 1 Tbsp. oil
  • 2 Tbsp. butter
  • 1 large potato (peeled and diced)
  • 2 medium carrots (peeled and diced)
  • 1 onion (medium, chopped)
  • 2 Tbsp. flour
  • 1 qt. chicken broth
  • 1 pkg. biscuit mix (mixed according to directions)
  • 2 sprigs thyme
  • 1 cup peas

    Directions

    1. Coat the pan with butter and oil, then add vegetables and cook until soft, about 5 minutes.
    2. Add flour to pan and cook two more minutes.
    3. Add broth and thyme, bring to a boil, and add chicken.
    4. Drop spoonfuls of dumplings into pot. Cover and steam 8-10 minutes.
    5. Add peas and cook for 1 minute longer, then serve.
