Ingredients

  • 2 sausages (chopped)
  • 100 grams chihuahua cheese (cubed, may substitute a mild cheddar or colby)
  • 6 leaves romaine lettuce (torn into bite-sized pieces)
  • 1 tomato (diced)
  • 1/4 red onion (cut into thin half moons)
  • 1/2 pickles (sliced)
  • 2 tablespoons pickle brine
  • 1 teaspoon white vinegar
  • 2 tablespoons mustard
  • 2 tablespoons olive oil
  • salt and ground black pepper

Directions

  1. Fry the sausage until golden brown. Remove from pan and blot to remove excess grease.
  2. Mix the lettuce, tomato, onion, and pickles together in a salad bowl. Stir in the sausage.
  3. Whisk together the pickle brine, vinegar, mustard, olive oil, salt, and pepper in a separate bowl. Drizzle over the salad and stir to coat.

I conjured up this recipe yesterday and followed the instructions as listed. It was a delightful meal with a bit of a kick to it, toned down by a little bit of sweetness. I will make it again, but, next time I will add a bit more sausage to help soak up some of the spice. Still give it 4 stars because it tastes so good.
