Ingredients

  • 1 cup sugar
  • 1/2 cup coconut oil (or butter)
  • 1/3 cup coconut milk (I actually used rice since I didn't have any more coconut. Almond, soy, or even regular milk would probably be fine too)
  • 2 teaspoons vanilla
  • 3/4 cup white rice flour
  • 1/3 cup coconut flour (or another 3/4 cup more rice flour)
  • 2 tablespoons potato starch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • frosting (Coconut, recipe below)
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla
  • 3 1/4 cups powdered sugar
  • 6 tablespoons full fat coconut milk (regular coconut milk might be okay too)

I used 1/4 c coconut oil and 1/4 c Healthy Blend dairy free butter. Also used almond milk because that is what I had on hand. Turned out great. Had to make another batch the next day because they disappeared over night.
