I used coconut oil and they turned out great. I will add a little cayenne next time to add just a hint of heat

AMAZING COOKIES!! First time making ginger cookies and they came out perfect. Chewy centers and crispy outside make them delicious coming out of the oven.

My daughter and I did not modify these at all. They are fantastic and her favourite! Her mouth was watering the minute they came out of the oven. Enjoying them in Muskoka end of August not Christmas.
