Loved these and so did my boyfriend who is not allergic to gluten (like me). I cut the sugar back slightly and used sweetened coconut since I already had it. Super easy and delicious!

This recipe worked out great with a few modifications for my diet. I used an equal amount of xylitol instead of honey and added two beaten egg whites to add moisture. My favorite is to add the zest of a lime, I call it my margarita cookie!
