  • shiso leaf
  • 1 liter water
  • 50 grams kombu
  • 150 grams onion (sliced)
  • 150 grams carrot (sliced)
  • 100 grams celery (sliced)
  • 50 grams fennel (sliced)
  • 20 grams ginger (sliced)
  • 5 grams porcini mushroom (dried)
  • 10 grams dried shiitake mushroom
  • 1 stick lemongrass
  • 500 grams chestnut mushroom (small)
  • 20 grams basil
  • 120 grams rapeseed oil (ideally raw and unfiltered, plus a little extra for brushing)
  • 1 dash light soy sauce
  • 4 bunches spring onion
  • celeriac roots
  • sliced leek
  • vegetable oil (for deep-frying)
  • 5 grams nori sheet (toasted and ground)
  • 5 grams porcini mushroom (dried, blitzed into a powder)
  • 5 grams onion powder
  • 8 grams fine salt
  • 20 grams chives (finely chopped)
  • 20 grams chervil (finely chopped, you could also use parsley)
