Chestnut Flour Crepes with Tangerine Curd

Description

When pancakes just sound too routine, these crepes offer breakfast with pizzazz. A hint of nut, combined with the tangy taste of tangerine offer a flavorful way to start your day. Top with powdered sugar or jam and watch them fly off of the plate.

Ingredients

3 eggs
2 tablespoons sugar
130 grams flour
70 grams chestnut flour
milk (60 cl.)
tangerine juice (10 cl.)
lemon juice (5 cl. of)
150 grams granulated sugar
3 eggs
1 tablespoon corn starch
30 grams butter
confectioners sugar

Directions

1In a medium bowl, mix eggs, sugar, flour and gradually add the milk.
2Let sit for 30 minutes.
3In a frying pan, melt a little butter and cook the crepes. Set aside.
4In microwavable bowl, combine the juice, sugar, eggs, and cornstarch, whisk until well incorporated.
5Microwave for 1 minute, stir with a fork. Return to microwave and keep cooking, checking consistency every minute. Add the butter and stir well. Let cool.
6Fill crepes with lemon curd, sprinkle with confectioner's sugar.
