When pancakes just sound too routine, these crepes offer breakfast with pizzazz. A hint of nut, combined with the tangy taste of tangerine offer a flavorful way to start your day. Top with powdered sugar or jam and watch them fly off of the plate.

Ingredients

  • 3 eggs
  • 2 tablespoons sugar
  • 130 grams flour
  • 70 grams chestnut flour
  • milk (60 cl.)
  • tangerine juice (10 cl.)
  • lemon juice (5 cl. of)
  • 150 grams granulated sugar
  • 3 eggs
  • 1 tablespoon cornstarch
  • 30 grams butter
  • confectioner's sugar

Directions

  1. In a medium bowl, mix eggs, sugar, flour and gradually add the milk.
  2. Let sit for 30 minutes.
  3. In a frying pan, melt a little butter and cook the crepes. Set aside.
  4. In microwavable bowl, combine the juice, sugar, eggs, and cornstarch, whisk until well incorporated.
  5. Microwave for 1 minute, stir with a fork. Return to microwave and keep cooking, checking consistency every minute. Add the butter and stir well. Let cool.
  6. Fill crepes with lemon curd, sprinkle with confectioner's sugar.

These crepes were ultra thin and were bursting with tasty goodness, especially with the tangerine curd. I cannot wait to prepare this recipe again for my in-laws when they arrive next month.
