Description

A frittata is a great way to get a healthy breakfast in with just a little bit of effort. Eggs provide a good dose of protein, while fresh cherry tomatoes add a healthy serving of vegetables. Mozzarella cheese adds a bit of creaminess while a sprinkling of chive adds a fresh and earthy flavor. This recipe is a great way to use tomatoes and fresh herbs in the summer and you can swap the chives out for other herbs like basil for a whole different flavor profile.

Ingredients

  • 3 eggs
  • 50 milliliters skim milk
  • 50 grams mozzarella cheese (grated)
  • 1 cup tomatoes
  • 2 garlic cloves
  • 1 bunch fresh chives
  • salt (to taste)
  • pepper (to taste)
  • 1 tablespoon olive oil

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Heat the olive oil in an oven-proof nonstick frying pan.
  3. Add the whole garlic cloves and let them fry a little over a low heat, until they release their aroma.
  4. Add the tomato and saute for 2 to 3 minutes, shaking the frying pan.
  5. Remove the garlic cloves.
  6. Beat the eggs, add the milk and the grated cheese. Season with salt and pepper. Pour on top of the tomatoes, and shake the skillet in circular movements to help stabilize the eggs.
  7. Chop the chives and place them on the top.
  8. Cook for 7 to 8 minutes on low heat.
  9. Transfer the frying pan to the oven to finish cooking.
  10. Serve warm.
