Requiring just three ingredients, this fresh cherry jam has an enticing almond flavor. Pit the cherries and let them soak in jelly sugar overnight. After that, all that is left to do the next day is to heat until the jam reaches your desired consistency. Add the almond extract and you have a delicious spread that will pair beautifully with toast, scones, or biscuits. You have never had a better reason to go cherry picking!

Ingredients

  • 1 kilogram pitted cherries
  • 500 grams jelly sugar
  • 1 tablespoon almond extract

Directions

  1. The night before, pit the cherries and place them in a pan with high sides. Mix in the the sugar, and cover until the next morning.
  2. The next day, heat the pan, stirring occasionally to desired consistency.
  3. Add the almond extract, and stir.
  4. Mince jam slightly, and pour into sterilized jars. Turn the jars upside down for a few minutes to create a natural vacuum.

This was such an easy recipe. I even skipped the part in step four that said to mince the fruit slightly, so it was even easier. I did taste it as it was cooking to see how sweet it was. I imagine depending on what your cherries taste like, you could and should adjust the amount of sugar to your liking. So, the jam was really good. I have been putting this on everything from toast to sandwiches and even waffles.
