Description
Cherry season is over in a flash, but you can capture their inimitable flavor by making a jam that can be enjoyed all year. You'll have to pit the cherries, so invest in one of those special tools (they are inexpensive and easy to find). Here, the cherries are flavored with lemon zest, cinnamon, and port and simmered until the mixture is jamlike (a candy thermometer takes the guesswork out of it).

- 600 grams cherries
- 400 grams sugar
- 1 cinnamon stick
- 1 lemon (zest)
- 1/2 cup port wine

Directions
- Remove the cherry pits.
- In a saucepan, add the cherries, sugar, cinnamon stick, lemon zest, and port wine.
- On medium heat, stir until the sugar forms a syrup. When the mixture starts to boil, lower the heat, and simmer. Cook for 1 1/2 hours until the jam reaches the setting point or 105 degrees Celsius.
- Pour the jam in sterilized jars, cover and turn upside-down to seal.
