Sticking to tradition, this Cherry Clafoutis combines our favorite cherry flavor with the sweet smoothness of flan. Ready in an hour, serve your Cherry Clafoutis with freshly whipped cream. Make your flan batter in a blender to ensure maximum smoothness.

Ingredients

  • 1 cup milk
  • 1 yogurt (natural sweetened)
  • 1/2 cup brown sugar
  • 1 cup flour (without yeast)
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 3/4 cherries (pitted)

Directions

  1. Preheat oven to 200 degrees Celsius.
  2. Place all ingredients in the blender (except the cherries), and turn on until you get a fluffy dough.
  3. Grease the pie pan with butter, and spread one teaspoon of sugar across the bottom.
  4. Remove the cherry pits.
  5. Place the cherries in the pie pan, and then the dough.
  6. Bake for about 45 minutes, or until golden brown as pictured.

This clafoutis was slightly sweet which allowed the full flavor of the cherries to come through. I broke the clafoutis into pieces and alternated a piece of it with a dollop of whipping cream and another piece of clafoutis.
