Description

Made with a creamy mixture of coffee, ricotta and vanilla pudding, these Popsicles are anything but dull. Once the pudding is prepared, the warm mixture is added to the ricotta and it's all passed through a sieve to ensure it's lump-free. Although this recipe calls for Zoku molds, any ice pop mold will do — just remember they need to be frozen a day ahead.

Ingredients

250 grams beans (Fagiolina del Trasimeno, may substitute cannellini beans)
1 carrots
1 onions
1 leeks
300 grams cherry tomatoes (cut into small pieces)
3 tablespoons extra-virgin olive oil
salt

Directions

1Heat the olive oil in a saucepan, add the chopped leek, and saute.
2In the meantime, cook the beans in boiling water for 30 minutes.
3Drain the beans and cook them again in salted boiling water for 20 minutes.
4Saute the finely chopped carrot and onion, then add the drained beans and the tomatoes and saute for 2 minutes.
5Serve the beans hot, seasoned with the sauteed oil and leek.
