This creamy, cheesy zucchini and rice casserole is sure to be a new Meatless Monday favorite.
Ingredients

- nonstick cooking spray
- 3 zucchini (medium)
- 1/2 yellow onion (large)
- 2 cloves garlic
- 3 Tbsp. salted butter
- 4 sprigs fresh thyme (leaves only)
- 1/3 cup all purpose flour
- 1 cup chicken broth (or vegetable broth)
- 2 cups half and half
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup shredded Gruyere cheese (for rice)
- 1/3 cup shredded Parmesan cheese
- 4 cups short grain rice (cooked)
- 1 1/2 cups shredded Gruyere cheese (for topping)

Directions
- Preheat the oven to 375°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Cut the zucchini into 3/4-inch pieces. Finely chop the onion. Mince the garlic.

It was okay, I think the recipe is wrong about 4 cups of rice I only used 2 and it was fine. For some reason I think it's missing something, maybe someone else will modify and I will try again.
