  • 2 tablespoons butter (softened)
  • 2 ounces grated Parmesan cheese (finely)
  • 10 ounces frozen chopped spinach (thawed and squeezed dry)
  • cooked white rice (10 oz pre-)
  • 3 large eggs (beaten lightly)
  • 1 cup cottage cheese
  • 5 ounces feta cheese (crumbled)
  • 3 spring onions (chopped)

    Directions

    1. Grease 10 cups of a muffin pan with the butter. Sprinkle the base and sides of cups with half the Parmesan. Preheat oven to 375°F.
    2. For the cake mixture, combine spinach, rice, eggs, cottage cheese, feta and spring onion in a large bowl and mix well. Spoon into the muffin cups. Sprinkle the tops with the remaining Parmesan. Bake 30 mins or until browned and just set. Serve hot.
