- 2 lb. boneless skinless chicken breasts (about 4 chicken breasts)
- 2/3 cup marinated artichoke hearts (drained)
- 1 1/3 cups baby spinach (shredded)
- 1 tsp. salt (for filling)
- 1/2 cup part-skim ricotta cheese
- 1 tsp. garlic powder
- 1/2 cup shredded Parmesan cheese
- 1/4 cup low-fat Greek yogurt
- salt (to taste, for chicken)
- pepper (to taste, for chicken)

Directions
- Preheat the oven to 425°F.
- Line a large baking sheet with parchment paper.

I didn’t care for it. I might try it again, cubing the chicken and simmering it in the spinach artichoke filling.

used ham instead of artichoke and a ceasar spread with parmersan instead of the cheeses. also brushed the chicken with butter, garlic, and Italian herbs

Does not taste good as far as I’m concerned. Needs more spices and seasoning to bring out the flavor. I won’t cook this again.

I think people who made comments about the dryness of the chicken or the mediocrity of the recipe either bought cheap meat or did something wrong in the process. Because this recipe tastes simply amazing and the chicken is moist when it comes out of the oven.

I should have drained my artichokes a bit more. But other than that it was good. Next time I might add something to add a little kick to it.

I made a rendition of the spinach and artichoke mixture and just dumped it over the top of the seasoned breasts. Easy, moist, quick and delicious.

I feel like I used a little bit too much artichoke, as, i free-handed it. Easy enough, bold on flavor, and nice light on account of low fat cheese. would paired terrifically with a Merlot.

This is a very bad recipe. I looked at other reviews and decided to put a panko crumb coating on the stuffed breasts with butter on this and, unfortunately, it still did not stop from a very dry result. Overall, the stuffing is very bland and did not taste at all like the dip it purports to mimic. What really makes me angry is that I spent $45 on all the ingredients for this recipe and it was awful. If you want to salvage it, I would make this with skin-on chicken breasts to keep the moisture in; or, better yet, stuff boneless chicken thighs. Otherwise, I would not recommend this recipe at all. Don't waste your time or money. Am sadly disappointed.

I recommend doing the salt to taste after adding the artichoke; whatever I bought my artichokes in was already pretty salty. If the same happens to you, some extra ricotta helps to level out the flavour (and lets be honest, a little more cheese is never a bad thing)
Otherwise—and beyond the fact that slicing a chicken evenly is a lot harder than I thought it would be—this recipe gets 2 thumbs up. Delicious.

Didn’t have artichokes so I made without and it was still delicious! I will make this again. I used frozen spinach

loved how it turned out!! i used more seasoning then just salt and pepper on my chicken and added mushrooms in my stuffing mixer but other then that everything was perfect

Very good! I used what I had - mozzarella instead of Ricotta - sour cream instead of Yogurt.

I made this dish last night and the filling was a total hit! Everyone loved it, the only thing that I will do differently would be that I would buy smaller chicken breasts for the dish or maybe even buy dark meat for this because the chicken was so dry! Other than that I will be making it again.

i enjoyed it, loved the flavor. My youngest didnt care for it but shes 7. My teenager ate it and shes super picky.

I actually found it boring to eat. The chicken needed more flavouring and the stuffing couldve used something.

Overall the dish was great , chicken was super moist . I just did not add enough artichokes .
