- 2 1/4 cups heavy cream (divided, whole milk is fine, but mixture wont thicken as much or be as creamy)
- 4 oz. grated Parmesan (divided)
- 1 Tbsp. thyme (fresh minced, divided, plus more for garnish)
- 1 garlic clove (minced)
- 2 oz. gruyere (shredded)
- salt
- pepper

Looked amazing however my husband and I thought it was a little weird the assortments of flavours. I like beets however they’re done but my husband wasn’t to keen but he liked the parsnips. I think we both agreed that it would have been amazing if it was just potatoes but then you would lack the colours which truly was like art
