A super easy, extra-cheesy chicken and rice casserole safe for those following a gluten-free diet.

- 4 cups cooked rice (1-1 1/3 cup uncooked, depending on rice type)
- 3 cups cooked chicken (diced or shredded)
- 2 scallions (large, minced)
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese (for casserole)
- 1 can evaporated milk (12 oz. per can)
- 1 cup sour cream
- 1 tsp. salt (plus more to taste)
- 1/4 tsp. black pepper
- 1 1/2 tsp. garlic powder
- 1 1/2 cups shredded cheddar cheese (for topping)

Directions
- Preheat the oven to 350°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Combine the rice, chicken, scallions, Parmesan cheese, cheddar cheese, evaporated milk, sour cream, salt, black pepper, and garlic powder in a large mixing bowl. Mix with a wooden spoon until well combined.

Was delicious! Only change I’d make is more cheese and sour cream! Less of the milk:)
