Good quick supper. I didn't have rotell so I used salsa instead. I used queso fresco cheese in the chicken mixture and cojack on top. Husband loved it

Now, this dish surprised me. I was on the fence about trying it because I thought, “oh, an experimenting college student threw this together on a whim...” Since I have college age kids, I thought I’d use them as Guinnea Pigs. Not too surprisingly, they loved it! I accidently put in too many Doritos and it had kind of a loaded nacho feel to it. The flavors melded together quite nicely and there’s no limit to what you can add or subtract. For my young adult kids, they’ve been wanting more. I shall oblige.

It was delicious! The only thing I tweeked was rotel tomatoes (used 1can). My children don’t like anything with a kick. Still turned out delicious!

This casserole was the bomb and a hit with my son and friends... I added a can of corn, black beans, Mexican cheese blend, cheddar cheese soup instead of cream of chicken soup. Seasoned the chicken with salt pepper granulated garlic and some of the taco seasoning. Who ever said it had no taste is out of there mind... it was awesome and definitely will make again this again.

Great! I modified the recipe a little, using only one can of tomatoes and adding jalapeños. I also added taco seasoning to the chicken breasts while baking and for added spice, I use Spicy Doritos. Easy to make and definitely recommend. I've made it several times now!

I forgot the canned tomatoes, so I substituted fresh and sautéed onions & bell peppers. It turned out great. My only tip is that it didn't fit in a 2qt.
