  • 5 cups cauliflower (roughly chopped)
  • 1 pound boneless skinless chicken breast cutlets (pounded to 1/2-inch thickness)
  • 1/4 teaspoon salt
  • black pepper
  • 3 cups broccoli (roughly chopped)
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1/4 teaspoon garlic powder
  • 3/4 cup fat free milk
  • 1 cup shredded reduced fat cheddar cheese
  • 1 tablespoon whole wheat flour
  • 2 wedges laughing cow (Light Creamy Swiss cheese)
  • 2 cups cauliflower (roughly chopped)
  • 2 tablespoons chopped cilantro
  • 2 teaspoons lime juice
  • 3 ounces boneless skinless chicken breast cutlet (pounded to 1/2-inch thickness)
  • 1 teaspoon taco seasoning mix
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 3 tablespoons canned black beans (drained and rinsed)
  • 2 tablespoons reduced fat Mexican blend cheese (shredded)
  • 2 tablespoons salsa (fresh, with less than 90mg sodium per 2-tbsp. serving)

Ugh not a fan of riced cauliflower I guess. Would not make again. Even if I used more cheese sauce, I don't think it would overpower the cauliflower enough

Surprisingly very good. It takes quite a bit of time and a lot of dirty dishes to make it, but totally worth it in the end!
