  • 2 cans black beans (Bush's, drained and rinsed)
  • 1 cup frozen corn (defrosted)
  • 2 ounces cheddar cheese (shredded)
  • 4 ounces cheese (monterey, shredded and divided)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 2 cups enchilada sauce (I used this recipe)
  • 3 scallions (chopped)
