  • 4 ounces cauliflower (finely chopped, about 2 heaping cups)
  • 1/2 cup plain bread crumbs
  • 1 cup shredded cheese
  • 1 egg
  • 1 egg white
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

    Directions

    1. Preheat the oven to 400°F. Line a sheet pan with parchment paper.
    2. Place the chopped cauliflower in the bowl of a food processor or blender. Pulse multiple times, until the florets have the same texture as couscous. Transfer the cauliflower to a mixing bowl.
    3. Add the bread crumbs, cheese, egg, egg white, garlic powder, onion powder, salt, and black pepper to the bowl with the cauliflower. Mix with a rubber spatula until the ingredients are thoroughly combined and hold together when pinched.
