Cheesecake with Cherry Syrup

  • 150 grams cream cheese
  • 50 grams Rulo goat cheese (without rind)
  • 100 grams milk
  • 30 grams sugar
  • 2 grams gelatin (plain)
  • 10 Goya Maria Cookies
  • 20 grams butter
  • 150 grams pitted cherries (chopped)
  • 70 grams sugar
  • 70 grams water
  • 2 grams gelatin (plain)


  1. 1For the crust, crush cookies and mix well with the melted butter.
  2. 2Press mixture in an even layer into each mold and flatten carefully with the back of a spoon.
  3. 3Refrigerate until cool.
  4. 4For the cheesecake, heat cream cheese, cheese, milk and sugar in a saucepan and bring to a boil.
  5. 5When it starts to boil, remove from heat and stir in gelatin until dissolved.
  6. 6Let cool.
  7. 7Pour mixture into prepared molds.
  8. 8Refrigerate until cool.
  9. 9For the cherry syrup, place cherries, sugar and water in a saucepan and bring to a boil.
  10. 10Cook for about 20 minutes, until syrup thickens, stirring often.
