  • 1 pound hamburger (lean)
  • 1 package taco seasoning
  • 1 can rotel (or can diced petite tomatoes)
  • 2 cups beef broth
  • 1 cup elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 3/4 cup milk
  • 1 cup shredded cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

    Directions

    1. Brown and drain beef, stir in taco seasoning, rotel, broth and macaroni
    2. Heat to boiling, reduce heat and cover pan, simmer 12-14 min until macaroni is tender
    3. Melt butter in saucepan, whisk in flour and cook, whisking flour for 5 min until light brown and fragrant.
    4. Whisk in milk and bring to boil, whisk until smooth and thickened
    5. Remove from heat, stir in cheese, salt and pepper until smooth. Pour over burger mixture.
