Ingredients

  • 1 red onion (peeled and chopped)
  • 3 tablespoons vegetable oil
  • 5 zucchini (sliced crossways)
  • 250 grams soft cheese
  • 1 eggs
  • 50 grams parmesan cheese (grated)
  • fresh basil
  • 45 grams milk
  • salt
  • ground black pepper
  • 1 rolls (ready-made short pastry)

Directions

  1. 1Preheat the oven to 180 degrees Celsius.
  2. 2Add the oil to a nonstick pan and heat on medium heat.
  3. 3Add the onions and saute for 5 minutes.
  4. 4Add the zucchini and saute for 10 minutes.
  5. 5Remove from the heat, and allow to cool.
  6. 6Place the zucchini mixture to a blender and add the cheeses, egg, basil and milk. Season with a pinch of salt and black pepper to taste.
  7. 7Line a pie dish with the short pastry and fill with the mixture.
  8. 8Fold over the edges of the excess pastry to form a border.
  9. 9Bake for 25 minutes or until the pastry is golden brown.
