Ingredients

  • 1/2 cup hellmann's or best foods real mayonnaise
  • 10 ounces fresh spinach leaves (, chopped)
  • 1/2 cup feta cheese (crumbled)
  • 2 cloves garlic (, chopped)
  • 4 boneless, skinless chicken breast halves
  • 8 slices prosciutto (Italian)

Directions

  1. Preheat oven 375°.
  2. Mix Hellmann's® or Best Foods® Real Mayonnaise, spinach, feta cheese and garlic in a bowl and make sure all ingredients are well mixed. Once complete place the bowl aside.
  3. Remove any extra fat from chicken breast.. Use a sharp knife to butterfly each chicken breast.. Make sure not to cut all the way through the breast.
  4. Spoon spinach mixture into the chicken breasts.
  5. Wrap two slices of the Italian prosciutto around each chicken breast and secure with a toothpick.
  6. Place the chicken breast on a baking sheet. Bake for 1 hour or until chicken is thoroughly cooked.

We only baked it for 30 minutes and it was cooked through. we even used a meat thermometer to make sure it wss done.

I want to make this recipe, but I question the need to bake @375-degrees for 1-hour. With the now much thinner layers of the chicken, I am afraid the chicken will be overcooked and very tough and dry. Has anyone made this recipe? Did you follow the cooking time? I am considering cooking the filling prior to filling the breasts to reduce the oven time. Comments? Suggestions? Thanks in advance!
