Ingredients

  • 5 grams yeast
  • 4 tablespoons warm water
  • 200 grams flour
  • 1 teaspoon salt
  • 60 grams parmesan cheese (grated)
  • 2 teaspoons fresh rosemary (minced)
  • 4 tablespoons extra-virgin olive oil

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Dissolve the yeast in the water.
  3. In a bowl, mix the flour, salt, cheese, and rosemary.
  4. Add the yeast and oil, and mix to flour. Add warm water as necessary if the dough appears too hard.
  5. Allow the dough to rest at room temperature for 45 minutes.
  6. Take a small amount of dough and form into a stick 20 centimeters long and 1 centimeter thick.
  7. Place on parchment paper-lined baking sheet. Repeat with the rest of the dough and bake for 20 minutes.
  8. Lower the temperature to 150 C and bake for 10 minutes.

The “sticks” are made from a single-rise bread recipe, and flavored with parmesan and rosemary. The basic recipe could be modified to use other flavors as well, such as garlic or sage. You could also make this a dessert “nibble” with cinnamon and sugar in the dough and dipping one end of the stick in melted chocolate.
