Baked rice is a refreshing change of pace from the usual steamed rice as a side dish at dinner, especially when it is well seasoned, as here, and forms a wonderful crust during baking. Saffron gives the rice a welcome bit of color, too, while a blend of cheeses and butter binds the rice and imparts richness to the dish. You can use a mix of gorgonzola, parmesan, and mozzarella, or other cheeses that you have on hand.

Ingredients

  • 500 grams short-grain rice
  • 60 grams butter (melted with 4 sage leaves)
  • 1 garlic clove
  • 500 grams cheeses (mixed, mild cheese, gorgonzola, grated parmesan, fresh cheese cut into small pieces)
  • peas
  • saffron (Powdered, dissolved in a little water)

Directions

  1. Preheat the oven to 200C.
  2. Cook the rice in a stockpot full of boiling salted water with a handful of peas until ‘al dente,’ then drain.
  3. Add the cheeses and the butter, the chopped garlic, and the saffron.
  4. Line a baking dish with wax paper, add the rice, press it well into the baking dish, and cover with wax paper.
  5. Bake for approximately 20 minutes.
  6. Remove the baking dish from the oven and serve hot.

This is simply rice mixed with cheese and peas, formed into a loaf and baked to create a crust. Saffron is what makes it special. You could experiment with different cheeses and vegetables for variety. Cheddar cheese and broccoli would be a classic choice.
