After soaking in milk, cubed, day-old bread is mixed with sauteed onions and a blend of finely diced cheeses. Shaped into patties, the disks are fried in a pan until crispy and golden brown. As the bread cakes cook, the cheese melts and forms a tasty crust and binds them into humble but delicious bites. Serve them with a green salad that's lightly tossed in lemon vinaigrette. Pass additional grated cheese as garnish.

Ingredients

  • 250 grams white bread (day-old, cut into cubes)
  • 300 milliliters milk
  • 1 onion
  • 1 tablespoon butter
  • 200 grams cheese (Graukase, or a very strong cheese)
  • 50 grams cheese (herb)
  • 1 bunch chives
  • 1 leek
  • 3 eggs
  • 1 tablespoon flour
  • salt

Directions

  1. Soak the bread in the milk.
  2. Chop the onion finely with the chives and the leek.
  3. Saute the onion mixture in a saucepan with the butter.
  4. Cut the cheeses into very small pieces and combine with the sauteed onion mixture and the soaked bread.
  5. Shape this mixture into flattened patties and place them in a hot non-stick pan to brown on both sides.
  6. Next, cook the patties in simmering water for approximately 8 minutes.
  7. Serve the patties with additional grated cheese and a green salad.

These were awesome, although in complete honesty, I love anything and everything that includes cheese and bread. I can't wait to make these again.
