Cheddar and Thyme Twists

  • 1/2 cup flour
  • 1/2 cup self rising flour
  • 14 tablespoons butter (frozen)
  • 1 tablespoon thyme leaves
  • 2/3 cup sharp cheddar cheese (grated)

    Directions

    1. Sift flours into a bowl. Coarsely grate butter over flour, then stir in thyme. Stir in 2/3 cup iced water until mixture starts to come together. Knead for 1 min or until dough forms.
    2. Scrape dough onto a lightly floured surface. Divide dough in half. Roll out each piece to a 12 x 8 inch rectangle. Sprinkle with half the cheese, pressing cheese into the dough. Fold in half to enclose filling. Reroll dough to a 16 x 6 inch rectangle. Repeat with remaining dough and cheese.
    3. Cut dough crosswise into 3/4 inch strips. Twist strips. Transfer to 2 baking sheets lined with parchment paper. Refrigerate for 30 mins.
    4. Preheat the oven to 375°F. Bake for 20 mins or until golden and crisp, swapping trays halfway through cooking.
