Chayote squash is in the gourd family and is a traditional, common vegetable in Mexico that is eaten raw in salads for crunch, or cooked for a smooth texture. This Chayote Squash and Zucchini Soup is both hearty and healthy. This flavorful soup combines peeled and chopped chayotes with rich and hearty ingredients for a powerful palate pleasing sensation. There are so many powerful flavors in this soup, it will guarantee to warm the heart and soul.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion (chopped)
  • 2 chayote squash (peeled and chopped)
  • 2 liters chicken stock
  • 2 zucchini (diced)
  • 2 poblano peppers (roasted, peeled, seeded, and cut into strips)
  • tomato sauce
  • ricotta cheese (or cottage cheese)

Directions

  1. Place a pot on the stove, pour in the olive oil and saute the onion until it becomes transparent, about 5 minutes.
  2. Add the squash and chicken stock. Cover the pot and cook for 10 minutes.
  3. Add the zucchini, and poblano peppers and mix well. Cover the pot again and simmer for 10 minutes on low heat.
  4. Serve with the tomato sauce and cheese sprinkled on top.

This chayote squash and zucchini soup was such a delicious treat that my entire family enjoyed. Not only is it a healthier option than most other soups, it was packed with big chunks of goodness in every soup and had lots of flavor. I may add some of my own spices to give it more of a kick next; but, still a 4 star recipe.
