Ingredients

  • 220 grams flour
  • 6 tablespoons ghee (or melted butter)
  • 1 teaspoon garam masala
  • 1 pinch salt

Directions

  1. In a large bowl, stir together flour, salt and garam masala.
  2. Add 4 tablespoons of ghee and about 1/4 cup of warm water while mixing constantly with your hands till the dough is moist.
  3. Add a little water or flour if necessary.
  4. Shape the dough into a ball. Cover the bowl with a damp towel. Let the dough stand in a warm place for 30 to 60 minutes.
  5. Divide the dough into 8 balls of equal size.
  6. Sprinkle some flour over the flattened balls. Cover with plastic wrap. Let rest for 30 minutes.
  7. Overwrite with three fingers a ball of dough and spread very thinly in a disc of 12 cm in diameter.
  8. Do the same with the other balls.
  9. Roll around the rolling pin, and transfer to a hot, greased griddle or heavy skillet.
  10. Cook over medium heat about 1/2 to 1 minute or until tiny brown spots appear. Using tongs, turn and cook 30 seconds more. Remove from heat.
  11. Brush with Usli Ghee or melted shortening. Repeat with the remaining balls.
