Ingredients

2 chicken breasts (boneless, skinned)
3 cups lettuce (cut in big slices)
1/2 avocado (cut into cubes)
24 grapes (seedless, sliced in half)
2 teaspoons chia seeds
1 tablespoon rice vinegar
2 tablespoons olive oil
ground pepper (as desired)
lemon juice (as desired.)

Directions

1Grease a skillet with cooking spray and preheat to high.
2Season the chicken breast with the lemon juice and pepper.
3Grill the chicken breasts on the skillet until they have a golden brown color on the outside and are well cooked on the inside.
4Slice the chicken breasts into small cubes.
5Mix the rice vinegar with the olive oil on a small bowl to prepare the dressing.
6Spread the lettuce, avocado, grapes, and chicken on 2 plates.
7Pour the dressing over the chicken salad and serve.
