Ingredients

  • 2 chicken breasts (boneless, skinned)
  • 3 cups lettuce (cut in big slices)
  • 1/2 avocado (cut into cubes)
  • 24 grapes (seedless, sliced in half)
  • 2 teaspoons chia seeds
  • 1 tablespoon rice vinegar
  • 2 tablespoons olive oil
  • ground pepper (as desired)
  • lemon juice (as desired.)

Directions

  1. 1Grease a skillet with cooking spray and preheat to high.
  2. 2Season the chicken breast with the lemon juice and pepper.
  3. 3Grill the chicken breasts on the skillet until they have a golden brown color on the outside and are well cooked on the inside.
  4. 4Slice the chicken breasts into small cubes.
  5. 5Mix the rice vinegar with the olive oil on a small bowl to prepare the dressing.
  6. 6Spread the lettuce, avocado, grapes, and chicken on 2 plates.
  7. 7Pour the dressing over the chicken salad and serve.
