- 2 cups boiling water
- 2 Tbsp. vegetable oil
- 2 onions (medium-large, chopped)
- salt (to taste)
- 1 Tbsp. minced garlic
- 1 Tbsp. minced ginger
- 2 chile peppers (small hot green, minced, optional, I left out)
- 1 tsp. brown sugar (packed)
- 1 ground turmeric (scant t)
- 1/2 tsp. ground cumin
- 1/4 tsp. paprika (or cayenne, to heat preference)
- 1 1/2 tsp. Garam Masala (divided)
- 1/2 basmati rice (scant cup, 100 g, 3.5 oz)
- 14 oz. diced tomatoes
- 14 oz. chickpeas (garbanzo beans, drained and rinsed)
- 1 handful chopped kale (frozen, or spinach, you can use fresh and add it earlier in cooking process)
- 1 handful chopped cilantro
- greek yogurt (for garnish, optional)
- 3 black pepper (grinds of fresh, to finish)
- lime wedges (for garnish, optional)
