Ingredients

  • 6 New York pork chops (1 1/2-inch thick)
  • 2 teaspoons butter
  • 2 teaspoons olive oil
  • 1 cup dried apricot
  • 3/4 cup golden raisins
  • 1/2 cup almonds (slivered)
  • 3 cups orange juice
  • 1 teaspoon fresh ginger root (grated)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (freshly grated)
  • 1/4 teaspoon allspice

Directions

  1. 1In a large heavy skillet, melt butter with olive oil over medium-high heat and brown chops on both sides. Remove chops to a deep casserole with a lid, mix together all other ingredients and add to casserole. Cover and bake in a 350 degrees F. oven for 45 minutes, until pork is tender and the internal temperature on a thermometer reads 160 degrees F. Serve chops the fruited pan juices, if desired.
