This delicious flatbread hails from Tuscany's coast and is an ideal snack or appetizer served right out of the oven. Made with chickpea flour, it's simply flavored with olive oil, rosemary and salt, followed by a few turns of freshly cracked black pepper right before serving. Though certainly not required, if you want to get fancy, you can serve the cecina bread with pesto or an Italian tomato spread.

Ingredients

  • 250 grams chickpea flour
  • water (1 lt.)
  • 1/2 cup extra-virgin olive oil
  • rosemary (twigs)
  • salt
  • black peppercorns

Directions

  1. Preheat the oven to 220C.
  2. Combine the chickpea flour with the water, stirring with a wooden spoon. Let the mixture rest for at least half a day.
  3. Add the extra virgin olive oil, the rosemary, and the pinch of salt.
  4. Place the mixture in a shallow baking pan greased with extra virgin olive oil. The bread should be 1/2 centimeter in thickness.
  5. Bake for approximately 40 minutes until golden.
  6. Serve cut into pieces, with freshly cracked pepper on top.

The bread is an easy one to make with so few ingredients and was good for someone like me who doesn't have a lot of experience. It turned out great. Do not skip the pepper step, as the sharpness of the pepper adds flavor and kick. I made up a little dish of olive oil, salt and pepper to serve as a dipping sauce.
