Ingredients

  • 1/2 kilogram cauliflower (separated into florets)
  • salt
  • 1/2 red bell pepper (seeded and cut into long strips)
  • 1/2 green bell pepper (seeded and cut into long strips)
  • 1/3 cup raisins
  • jalapeno chilies (chopped)
  • 1 onions (small, peeled and minced)
  • 1 tablespoon olive oil
  • 10 cloves garlic (minced)
  • 3/4 cup red wine vinegar
  • 1/3 cup sugar
  • 2 tablespoons black peppercorns
  • 2 tablespoons dried oregano
  • 1 tablespoon dried thyme

Directions

  1. 1Fill a large pot with water and bring to a boil. Once boiling, add salt and cauliflower.
  2. 2Cook the cauliflower until soft. Drain the cauliflower and add to a bowl of cold water.
  3. 3Repeat this process with the bell peppers, make sure to cook them for about 5 minutes.
  4. 4Drain the vegetables and add them to a large bowl.
  5. 5Add the raisins, jalapenos, and onions. Set aside.
  6. 6Add the olive oil to a skillet and heat on medium heat. Saute the garlic in a pan for 10 minutes, making sure that the garlic does not become brown.
  7. 7Add the vinegar, sugar, and peppercorns, cook until the mixture begins to boil.
  8. 8Once the sugar has dissolved, allow it to cook for 1 minute. Add the oregano and thyme.
  9. 9Pour the liquid onto the vegetables in the bowl.
  10. 10Place the bowl in the refrigerator for 1 hour before serving.
