Cauliflower is often used in "sauces" for pasta in Italy, where you will often find it roasted, sauteed, or steamed and combined with salty-sweet ingredients including capers, anchovies, and/or raisins. In this recipe, the cauliflower is first blanched until tender, and then the pasta cooked in the same pot of water. You could stop there, but in this recipe the pasta and cauliflower is combined in a bechamel sauce and baked to perfection.

Ingredients

  • 1 cauliflower head
  • 200 grams pasta
  • salt
  • 60 grams butter
  • 60 grams flour
  • 1 liter milk
  • 100 grams white cheddar cheese
  • 1 tablespoon dijon mustard

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Add the cauliflower to a large pot of salted water and boil it 7 minutes. Drain and set aside in a large bowl.
  3. In the same pot, filled with fresh salted water, boil the pasta for about 8 to 10 or until al dente. Drain and add to the cauliflower.
  4. In a small pan, add the butter and melt. Add the flour and stir well. Slowly whisk in the milk until a thin sauce forms. Add half of the cheese and mustard and mix well.
  5. Add the sauce to the pasta and toss. Add the pasta to a baking dish.
  6. Add the remaining cheese and bake for 5 minutes until the cheese melts.
