I had to change how it was cooked as it was mushy. Instead of following the instructions, I coated a cooking sheet with a small amount of olive oil and cooked it in the oven at 425 for about 12 minutes. I then turned on the broiler and let it cook an additional 10 minutes to get more of a drier rice consistancy.

Yum yum yummy! I love this recipe. It really does feel like you’re being naughty and having carbs with your meat dish. This went well with salmon. I can’t wait to have this again!😄

Super delicious and it makes me not feel guilty (a win win situation) i chopped the cauliflower instead of putting it in the food processor. added garlic and ginger as well. the ginger adds a kick to the rice. used marjarine instead of oil or butter. added a pinch of salt and soy sauce at the end. topped it off with an omelette. super delicious and healthy. gonna eat this every day

This was truly, truly, amazing. We added garlic and soy and it was flavorful! Will be a favorite for me. It tasted somewhat sweet but still very edible.

Great recipe! So flavorful with so few ingredients. I steamed the cauliflower then pulsed. For seasoning I added granulated garlic which truly took it to another level of flavor.

i added garlic and a fresh chopped sprig of rosemary, and some coconut flakes at the end, trying to make something like thai coconut rice. Great simple low net carb alternative to rice.

I used olive oil and ditched the onions, still tasted fragrant with a nice crumbly texture similar to that of fried rice. Very satisfying and guilt free!
