Ingredients

  • 1/4 cup soy sauce
  • 1/3 cup rice vinegar
  • 2 tablespoons peanut oil
  • 1 teaspoon sesame oil
  • 2 teaspoons brown sugar
  • 17 ounces cooked chicken (shredded)
  • 1 1/2 pounds chinese cabbage (thinly sliced)
  • 2 spring onions (thinly sliced)
  • 3 1/2 ounces beansprouts
  • 1 cup cilantro leaves (fresh)
  • 1/2 cup salted cashews
  • 2 tablespoons pepitas (toasted)

Directions

  1. Whisk together soy sauce, rice vinegar, peanut oil, sesame oil and brown sugar. Gently toss with remaining ingredients. Serve.
