Description

A rich buttery cashew and coconut base meet a creamy topping in this delicious cashew cake. Nutty and warm with a little flavor of the tropics this cake takes dessert to the next level.

Ingredients

80 grams margarine
100 grams sugar
70 grams cashew nuts
50 grams bread crumbs
30 grams dry coconut
180 grams margarine
180 grams sugar
250 grams flour
2 eggs
1 tablespoon baking powder
1 deciliter milk
powdered sugar (for dusting)

Directions

1Soften the margarine in the microwave, and mix with the sugar, cashews, breadcrumbs, and coconut.
2Pour in the base of a round cake mold, and refrigerate.
3Preheat oven to 180 degrees Celsius.
4Beat the butter with the sugar until you get a smooth cream. Add the eggs, and beat until well mixed.
5Add the flour with the baking powder, alternating with the milk. Beat well until the batter is creamy and homogeneous. The result should be a thick dough. Pour the mixture in the already prepared cake pan, and bake for about 40 minutes.
6Check the cooking with a toothpick, remove from oven and unmold while it's still hot.
7When it cools, sprinkle with powdered sugar.
