Ingredients

  • 1 can chickpeas (garbanzo beans)
  • 1 cup shredded carrots (or coarsely chopped, diced, I used a food processor, but carrots could also be chopped with a knife or you can use pre-shredded carrots)
  • 1 cup chopped parsley (coarsely, either type, but I used curly parsley)
  • 1/2 cup green onions (scallions)
  • 1/2 cup crumbled feta cheese (optional)
  • 1/2 cup sunflower seeds (optional, but highly recommended, could also use pine nuts)
  • 3 tablespoons fresh lemon juice
  • 6 tablespoons olive oil
  • 1 teaspoon ground cumin (or less if you're not that fond of cumin)
  • 1 pinch sea salt (/fresh ground black pepper)
  • 1 pinch aleppo pepper (optional but very good)
