Description

Healthy never tasted so good. This carrot cake has no butter but all the good flavor of your favorite carrot cake. Cinnamon adds the perfect amount of spice to this ready for autumn cake.

Ingredients

  • 300 grams carrots (peeled)
  • 100 grams walnuts
  • 6 eggs
  • 300 grams sugar
  • 2 deciliters oil
  • 350 grams flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon (sweet)
  • powdered sugar (for dusting)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a baking tray with margarine and flour. Set aside.
  3. Begin by grating the carrots. Set aside.
  4. Weigh the walnuts, coarsely break in pieces, and set aside with carrots.
  5. In a bowl, beat the eggs and sugar until you get a fluffy yellow dough. Stirring constantly, add the oil, and mix until all is well combined.
  6. Then add the flour, baking powder, and cinnamon. Beat until obtaining a homogeneous mixture.
  7. Add the nuts and carrots, and mix well.
  8. Place the dough in baking tray, and bake for 40 to 45 minutes.
  9. Stick a toothpick in the center of the cake, when it comes out clean, the cake is done.
  10. Remove from oven, and chill on a rack.
  11. When cold, cut into squares, and sprinkle with powdered sugar.
