Description

The only thing missing from carrot cake is the chocolate. This recipe for carrot cake has it all, including the chocolate! Made with oil instead of butter, this cake has rich texture. A great way to get a little more vegetables into your children's diets.

Ingredients

275 grams carrots (peeled)
4 eggs
225 grams sugar
125 milliliters oil (used half vegetable oil, half olive oil)
225 grams flour
1 teaspoon baking powder
1/2 cup chocolate chips (or similar)
powdered sugar (optional)

Directions

1Preheat oven to 180 degrees Celsius.
2Grease a cake pan with margarine, and sprinkle with flour. Put aside.
3In a food processor, grind the carrots, in small pieces. Put aside.
4Place the eggs in a bowl with the sugar, and mix until whitish and fluffy.
5Add the carrots and oil, and stir again.
6Add the flour and baking powder, and mix without beating.
7When the dough is uniform, add the chocolate chips, and mix with a spoon.
8Place the dough in the cake pan, and bake for about 35 minutes.
9Check the cooking, remove from oven, and let cool.
10Sprinkle abundantly with powdered sugar (optional).
