Ingredients

  • 1/4 cup vegetable oil
  • 1/2 cup brown sugar
  • 3/4 cup rice milk
  • 1/4 cup applesauce
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1 medium carrot (coarsely grated)
  • 2/3 cup dried apricots (finely chopped)

Directions

  1. Preheat oven to 350°F. Line a 12-cup muffin pan with paper liners. Grease liners.
  2. Whisk together oil, sugar, rice milk and applesauce. Sift and fold in flour, baking powder and spice mixture. Add carrot and apricot and stir until just combined. Distribute between paper liners and bake for 20 mins, or until a skewer inserted in the center comes out clean. Transfer to a wire rack to cool. Serve.
