Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder ( each, and baking soda)
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup raisins
  • 1/4 cup chopped nuts (or unsweetened flaked coconut)
  • 2/3 cup eggs ( Naturegg Omega Plus cracked, well shaken)
  • 1/3 cup vegetable oil
  • 1 cup shredded carrots (2 medium)
  • 1 apples ( medium unpeeled, shredded)

Directions

  1. In large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, salt, raisins and nuts. In another bowl, stir together liquid eggs, oil, carrots and apple.
  2. Pour egg mixture into flour mixture, stirring just until moistened. Spoon into greased or paper cup-lined muffin tins.
  3. Bake at 375°F (190°C) 18-20 minutes or until firm to the touch. Cool on rack.
  4. To hard cook, place cold eggs in a single layer in a saucepan and cover with at least 1 inch (2.5 cm) of cold water over the top of the eggs. Cover saucepan and bring quickly to the boil over high heat. Immediately remove pan from heat to stop boiling. Let eggs stand in water for 18 to 23 minutes. Drain water and immediately run cold water over eggs until cooled. This helps to prevent a dark or greenish ring from forming around the yolk. Remove egg from shell.
