  • 1/2 cup dark brown sugar (organic)
  • 3/4 cup whole wheat pastry flour
  • 1/2 cup spelt flour
  • 1/4 cup kamut flour
  • 3/4 cup almond flour
  • 1/2 cup spelt
  • 1/4 cup kamut
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/3 cup coconut oil (melted, but not hot, ** or 1/2 c butter)
  • 1/2 cup greek yogurt (Chobani pineapple)
  • 1 teaspoon vanilla
  • 2 eggs (lightly beaten)
  • 1 1/4 cups carrots (loosely packed grated, pulsed in the food processor until they were finely grated)
  • 1/4 cup coconut (unsweetened, toasted)
  • 1/2 cup walnuts (chopped & toasted)

    Directions

    1. Preheat the oven to 350F. Grease or line a muffin tin with paper liners and set aside.
    2. In a large bowl, mix quinoa, sugar, flours, baking soda, cinnamon, ginger, nutmeg, allspice, and salt.
    3. In a smaller bowl, mix coconut oil, greek yogurt, vanilla, and eggs.
